Baking is a science and can be tricky.  Sometimes your cakes don’t come out like they should or you’d like them to so here are some tips to help you figure out what went wrong!

Bottom crust is too dry

  • Lower your oven temperature
  • Make sure your pans are of a high quality
  • Reduce your baking time
  • Place your tin on a baking tray to reduce the heat on the bottom

Cake has dry edges

  • Lower your oven temperature
  • Reduce your baking time
  • Use baking strips or wrap your cake tin in newspaper
  • Use a baking nail

Cake doming

  • Lower your oven temperature
  • Don’t overmix your mixture
  • Place a baking tray on the shelf above your cake to reduce the heat on the top
  • Use baking strips or wrap your cake tin in newspaper
  • Use a baking nail

Cake sinking in the middle

  • Increase the oven temperature
  • Mix your batter less, if in doubt finish off your cake by hand with a spatula rather than mix fully with your electric mixer
  • Increase the time it’s in the oven
  • Add less fat, liquid, or sugar to the recipe
  • Don’t open the oven door
  • Make sure your cake is fully cooked before you take it out of the oven

Cake sticks to the pan

  • Use baking paper around the cake or resuable cake liners
  • Make sure that your cakes rest longer in the tins before taking them out but ensure that they’re out of the tin before they’ll fully cool
